3 Ingredient Pancakes

This is the perfect post training snack, I used this after a huge swim set last week. Only 3 ingredients so if your running out of food in the fridge, this is awesome! If you try it tell me what you think?

Ingredients – serves 2 

2 tbsp smooth peanut butter

2 eggs

1 med banana


Whizz together and fry on non stick fry pan till golden. Top with what ever takes your fancy. I used mixed frozen berries and vanilla yogurt.

Vego gluten free lentil couscous


1 tbs chopped walnuts

½ cauliflower

2 broccoli trees

200g tin lentils, well rinsed

2 tsp currants, soaked in 1 tbs boiling water

1/2 tsp ground cumin

sea salt & cracked pepper

1/2 lemon

Heat a non-stick saucepan over medium heat and toast walnuts. Remove from heat and set aside. Put cauliflower and broccoli in a food processor to a crumb. Spray pan with oil and add lentils, currants (including soaking water) and cumin. Stir through the cauliflower and broccoli and heat through until warm. Season with salt and pepper, add toasted walnuts, squeeze of lemon and coriander to serve.

Pulled Pork Rolls


Want a fun meaty dish to fill your tummy? Look no further than these tasty pulled pork rolls. This recipe is great for a family treat, or for the boys looking to bulk.

If your cooking for two, just like I am then this recipe keeps well in the fridge. Just remember to leave your stored salad dressing free until use, so it stay’s fresh and crisp.

Muscle up amigos!


1kg pork scotch fillet roast

2 tbs Cajun seasoning

250ml orange juice

¼ red cabbage

¼ green cabbage

¼ red onion

1cup coriander leaves

1 lime juice

2 cup water

2 tbsp mayonnaise

Salt as needed

6 seeded rolls

BBQ sauce at needed


Cooking time 4hrs- Serves 6

Pre heat the oven to 180 degrees. Get a cast iron pot and place chopped onion, juice and 1x cup of water. Stir well.

Rub Cajun seasoning into the pork and place it into the pot. Cook for 2hrs, after time has passed turn the pork over and re-baste in liquid. If liquid has dried add more water accordingly.

Whilst the pork is cooking shred the cabbage into a bowl and chop the coriander finely. Combine all salad ingredients and add lime, mayo and salt as needed.

After 4hrs remove pork from the oven let sit for 20min before attempting to pull pork into strips. Whilst warm, place pork, salad on a roll with a squirt of BBQ sauce. Enjoy!


Mixing in more veggies


I’ve been thinking about way to get more veggies in without making to much of an effort. With all this extra training I’m doing, I’m getting so hungry I need ways to bulk out my eating without gaining weight. I’ve got a half marathon coming up in September where I’m trying to drop a few kilos to get my run times faster. This is what I came up with: low sugar fruits, celery in a smoothie. You can’t actually taste the celery. Enjoy!


1/2 cup celery

1/2 cup frozen strawberries

1/2 cup frozen blueberries

1 cup skim milk

1 heaped tbsp greek style vanilla yogurt

1/2 tsp cinnamon

1 tsp stevia


Blend and serve!
